芜菁、萝卜和大头菜块根品质及营养价值比较研究 被引量:35

摘要 利用常规分析方法比较了芜菁、萝卜和大头菜 3种块根类蔬菜的品质及其营养价值。结果表明 :芜菁的总糖、总酸、可溶性糖 /总糖、抗坏血酸含量明显高于萝卜和大头菜 ,可溶性糖和游离氨基酸含量高于萝卜而与大头菜相当 ,而粗纤维则明显低于萝卜和大头菜 ;芜菁中的蛋白质、胡萝卜素、核黄素、钙等含量也明显高于萝卜和大头菜。认为 3种块根类蔬菜中芜菁的品质和营养价值最佳 ,其次是大头菜、萝卜。 The quality and nutrient value of tubers in three brassica vegetables among turnip, radish and kohlrabi were analyzed. The results showed that the contents of total sugar,total acids, soluble sugar/total sugar and vitamine C were obviously higher in turnip of wenzhou than in radish and kohlrahi, the contents of soluble sugar and free amino-acids were higher in turnip than in radish and no differencd in kohlrahi; but the contents of rough fiber were lower in turnip than in radish and kohlrahi and the contents of protein, carotene , vitamine B 2 and calcium were higher in turnip than in radish and kohlrahi.By comparison of their quality in the tubers ,the turmip of wenzhou is the best among,the three brassica vegetables.
