摘要
水稻直链淀粉含量是优质育种中权衡米饭蒸煮品质和食味品质的重要指标 ,也是决定稻米综合评价中最关键的因素。直链淀粉含量的高低除受水稻品种本身遗传基因控制外 ,在一定程度上受环境因素 (温度、光照、海拔 )和农业技术因素 (播种期、栽培密度、灌水、施肥等 )的影响。本文综述了稻米直链淀粉含量及其影响因素 。
The content of maylose in rice is an important criterion for cooking quality and flavour and a key factor for comprehensive evaluation of rice. The content of amylose is controlled by genetic basis of the variety and to some extent, is influenced by environmental factors (temperature, sunlight and altitude)and cultivation factors(sowing date, density, irrigation, fertilization and so on).The paper reviews the content of amylose in rice and its influential factors as to direct the production of quality rice.
