摘要
猪肉的感官品质受遗传、营养和饲养、屠宰及加工条件等多种因素的影响。本文系统综述了猪的基因型、性别、年龄、饲粮营养水平、矿物质、维生素、生长促进剂及屠宰条件对肉质的影响规律 。
Pork quality is influenced by many factors such as pig genetics, nutrition and feeding, slaughter conditions. This review summarized the effects of genotypes, sex, age, nutritional level, minerals, vitamins, growth promoters and slaughter conditions on pork quality. This summary will be a reference for establishing comprehensive manipulations to improve pork quality.
