本文以Willstarter和Schudel的醛糖测定方法(亦即碘量法)为依据,从乳糖水解反应的本质出发,提出并建立了一套快速测定低乳糖牛奶水解率的新方法。

The follouing description is base on the testing method of aldose which is performed by Willstarter and Schudel's (iodine number method) The testing technique have set up one new and fleety way for testing the hydrolyze rate of low lactose milk.The result of the experiment indicate that this testing techique can be uesd more conveniently,more fleety and accurately.This method can be used to measure the hydrolyze rate of low lactose milk processing,and instead of the information method.
