摘要
比较研究了大、小叶种茶儿茶素在植物油中的抗氧化作用 .结果表明 ,大叶种茶的儿茶素的抗氧化作用强于小叶种茶 .添加儿茶素对油脂的色泽和酸价产生影响 。
This paper is an attempt to probe into comparing the antioxidant activities of tea cathcin between large and small leaf tea.The results show that the antioxidant ability of tea catechin of large leaf tea is more intense than that of small leaf tea. Catchin can effect the color and value of acid of plant oil. But the values keep in the scope of national standard.
