摘要
通过对各龄期中华稻蝗的一般营养成分以及氨基酸、脂肪酸、矿物质和微量元素、维生素进行分析 ,结果表明 ,各龄期中华稻蝗水分含量在 70 .5~ 75 .1g/10 0 g之间 ,干物质中灰分含量为4 .5 3~ 4 .98g/10 0 g ,总糖含量为 0 .72~ 1.4 3g/10 0g ,粗蛋白含量在 6 4~ 6 8g/10 0 g之间 ,含有人体所必需的 8种氨基酸 ,其必需氨基酸含量占氨基酸总量的 4 0 .89%~ 4 3.2 8% ,第一限制氨基酸为含硫氨基酸 ,第二限制氨基酸为色氨酸 ;脂肪含量为 7.16~ 9.4 1g/10 0 g ,其中不饱和脂肪酸占脂肪酸总量的 79.16 %~ 86 .37% ,亚麻酸含量特别高 ,占脂肪酸总量的 5 4%以上 ;检测的几种维生素含量都比一般动物性食物高 ,其中维生素E含量高达 6 5 .5 6mg/10 0 g ,接近被称为VE 王的麦胚油含量的一半 ;其矿物质及微量元素含量丰富 ,铜、锰、铁含量高于一般动物性食物 ,而铬含量较高 ,达6 6 .5ng/10 0 g。
In this paper the contents of general nutrients, amino acids, fatty acids, mineral and trace elements and vitamins etc. in different instars of Oxya chinensis Thunberg were analysed. The data indicate that there is a protein content range of 64-68g/100g, in which there is a EAA range of 40.89%- 43.28% in total amino acid, and fatty content of Oxya chinensis Thunberg is low, about 7.16-9.14 g/100g , however unsaturated fatty acid is high in total fatty acids (79.16%-86.37%), especially Linolenic level is about 54%, vitamin contents are higher than those in general animal food, especially vitamin E content is about 46.33-66.56mg/100g. The contents of Cu, Mn, Fe and Cr is higher than those in general animal food too.
