摘要
固定化活酵母发酵技术是近10年发展起来的一项新技术,其研究始于20世纪70年代。目前,已广泛应用于酒精发酵。本文主要综述了固定化活酵母的机理、在生产实践中的效果及其应用前景。
The technology of fermentation with yeast carrier is a mew technology of fermentation developed in recent ten years. It's study began in 1970's. It has been widely applies in fermentation of alcohol. The mechanism, effect and prospect of the technology is summarized in this article. The author's viewpoints are also presented.
