摘要
籽粒苋富含蛋白质和赖氨酸,可在一般谷物难以生长的贫瘠土地种植.本文报道用改制的强力脱皮机对籽粒苋脱皮,其最佳参数为:存气2.5~3mm,转速900~1450r/min,脱皮时间2~3min.并且用显微、化学等方法分析了逐层脱皮样品,结果表明籽粒苋营养素的分布与一般各物相仿,其营养素大多集中在皮层、脱皮苋米营养成分优于大米和小麦粉.
Amaranth contains rich protein and lysine and it can be grown in the poor soil where common cereals can not grow with ease. This paper reports that the milling of the amaranth is performed by the modified strong mill. And the optimum parameter is as follows: the clearance: 2.5~3mm, the revolution rate: 900~1450r/min, the milling time: 2-3min. In this paper, the histological and chemical methods are used to analyse the successively-milled sample the result of which shows that the nutrition distribution of the amaranth resembles that of common cereals. In general, nutrients are highly concentrated in the seed coat of amaranth. And the nutrient content of the milled grain amaranth is higher than that of rice and wheat flour.
