本文通过对包装酱油在贮存过程中出现色率 (EBC)上升 ,红色指数下降的分析研究 ,提出选用合适包装材料 ,适宜保存温度和稳定包装酱油色泽的技术措施 ,可有效稳定包装酱油的色泽 。

This article is to do research about EBC added and red index fall of packed soy sauce in the store period.Result using right packing material,store in feasible temperature and other stabilization method can stabilize the color of packed soy sauce.It is helpful to soy sauce manufacturer.
