摘要
小曲是生产小曲酒的糖化发酵剂。文中对小曲的作用、原料组成、生产条件以及生产工艺等方面的研究进展进行了综述。高质量的小曲 ,不仅能够提高小曲酒的出酒率 。
Xiaoqu is the saccharogenic and fermentative agent in Chinese spirits production. This review summarizes the progress in function, the composition of raw materials, the condition of production, and technology of production etc. The high quality of Xiaoqu increases both the production yield and flavor quality of Chinese spirits prepared by Xiaoqu.
