摘要
本文研究了四种澄清剂对野生红豆果饮料的澄清作用。结果表明饮料澄清剂Ⅱ型效果最好 ,澄清迅速 ,生成的絮状沉淀物颗粒大 ,易于分离 ;透明度高 ,不影响饮料的颜色和风味 ;澄清后的饮料具有很好的稳定性 ,工艺简单 ,成本低。最适用量为 0 .0 5 %。
Clarification effect of four kinds of clarifier on wild Vaccinium beverage was studied.The results showed beverage clarifierⅡhad the best clarification effect and clarifier fast.It was separated easily with large size particle of the deposit.After being clarified with clarifier Ⅱthe beverage showed high tranparence and stability without undesirable effect on its color and flavor.Also this clarifying was easy with low cost .The best dosage is 0.05%
