摘要
螺旋藻蛋白质经蛋白酶水解后 ,采用离子交换树脂进行脱盐处理 ,其盐份明显降低。并用活性炭进行脱色、脱臭处理后 ,水解液由墨绿色变成淡黄绿色。螺旋藻蛋白质水解液经过精制后 。
The protein of spirulina was hydrolyzed by enzymes.Salt was removed by ion exchange resin.There was more dark color in the hydrolysate.The activated carbon will remove the dark colour and improve the flavor of hydrolysates.The refined hydrolysate was more useful in food industries.
