摘要
研究了酶法水解淡水鱼制备水解鱼肉蛋白 ,探索了胰蛋白酶、胃蛋白酶、中性蛋白酶和木瓜蛋白酶的最适水解条件。在此基础上 ,探索了双酶组合水解的最适水解条件。
The preparation of hydrolysis freshwater fish protein by enzyme methods and the hydrolysis optimum conditions of trypsin,pepsin,neutral proteinase,papain were studied.On the basis of the experimental results of mono-enzyme hydrolysis,the hydrolysis optimum conditions of two enzymes were discussed.
