摘要 微机控制架式大曲有曲房利用率高、生产不受季节限制、劳动强度低、节约辅料、出曲率较人工制曲高等优点,但不足之处是曲的质量较人工曲差。为此,采用有效的改良措施,提高微机架式大曲的质量。(1)选育糖化酶、液化酶、蛋白水解酶、酯化酶活力高,产酸低的优良菌株;(2)模拟自然环境,改小曲房,曲架四周围草帘,架顶覆盖草帘,加强保温、保湿、挂霉、穿衣措施;(3)踩曲时添加优质母曲粉;(4)曲坯上架后,喷施曲母液。生产试验结果表明,改良后的微机架式大曲质量优于常法微机架式大曲,达到或优于人工大曲质量。糖化力、液化力、发酵力均优于常法微机架式大曲和人工大曲;产酒优级品率大大高于传统人工大曲和常法微机架式大曲。(庞晓) Computer-controlled shelf starter-making had the advantages such as high utilization rate of starter-making plant, no season limitation, Sow labor intensity, saving auxiliary materials and higher starter output rate than starter by manual work. But it also had the disadvantages in the quality which was inferior to starter by manual work. Accordingly, the, following effective measures were ap-plied to improve its quality: 1. breeding selection of quality strains producing low acids and containing high-vitality saccharifying en-zymes, liquifying enzymes, proteolytic enzymes and esterified enzymes; 2. simulation of natural environments by downsizing the starter-making plant, starter shelves surrounding by and its roof covering by grass curtain and reinforcement of the measures of heat preserva-tion, humility preservation, mildew hanging and coating; 3. addition of quality matured starter powder; 4. sprinkling yeast liquid after the placement of starter layers on the shelves. The test prodution results indicated that the above measures could make the starter quality better than before and even achieve or better than that by manual work, and it could also improve the saccarification power, the liquefaction power and the fermentation power of the starter and increase greatly the quality liquor yield rate higher than that by conventional methods or manual work.
