摘要 研究发现,红曲霉能代谢出促进己酸与乙酸合成己酸乙酯的酯化酶。引入红曲霉菌种,制成帘曲应用于浓香型酒生产中。(1)直接混入大 发酵;(2)应用于双轮底发酵;(3)制成酯化液。红曲霉帘曲糖化力为2666 u/g,用量不可过大。应用红曲霉帘曲,可提高出酒率1%~2%,提高优质品率10%。(丹妮) The research indicated that monascus could metabolize esterified enzyme which could further advance the composition of acetic acid and caproic acid into ethyl caproate. The monascus species were introduced to produce screen starter which could then be used in the production of Luzhou-flavor liquors and the application methods were as follows: 1. direct mixing into the first fermented grains for fermentation; 2. used in double bottom fermentation; 3. produced into esterified liquid. And the use level of screen starter should be controlled because its saccharifying capacity was 2666u/g. The application of screen starter could effectively increase liquor yield by 1 %~2 % and quality product rate by 10%.(Tran. by YUE Yang)
