摘要
长酵糟恢复生产中应用TH-AADY配以“堆积发酵”工艺,调整了发酵体系,增强了糟子的活性,解决了长酵糟(质量糟)的掉排问题,原料出酒率和优质品率分别提高2.6%和7%~9%。
The application of TH-AADY coupled with the technique of pile fermentation in the comeback production of long-fermented grains could solve the problem of permutation loss of long-fermented grains by adjustment of fermentation system and improvement of the vitality of the grains. And this method could increase yield rate and quality rate of raw materials by 2.6 % and 7%~9% respec-tively. (Tran, by YUE Yang)
