摘要 番茄红素是开链式的不饱和类胡萝卜素,具有抗氧化、清除自由基、促进细胞间的连接和传导、防癌抗癌等多种生理功能,作为一种功能性天然色素,番茄红素被认为可以广泛应用在功能性食品和医药(原料)中。本文详细介绍了番茄红素的分布、提取工艺、生理功能、主要应用及国内外番茄红素的研究和生产情况。
