摘要
乳铁蛋白是一种具有多种生物活性功能的糖蛋白 ,是当今乳品界和食品界最为关注的“热点”之一。本文阐述了乳铁蛋白的结构、性质、抗热变能力 ,介绍了乳铁蛋白在抑菌杀菌、抗病毒、免疫调节、调整肠道菌群、促进铁吸收等方面的作用 ,并对其分离。
Lactoferrin is a kind of natural glocoprotein with multiple biological activities, and has become the focus of dairy and food circles' attention. This paper expounded the structure, properties and thermal denaturation resistance of lactoferrin. The active roles it plays in bacteriostasis, sterilization, antivirus, immunoregutation, regulating intestinal microflora as well as promoting the absorption of iron are introduced in detail. This article also briefed lactoferrin's separation, preparation and prospect of its application.
