摘要
开发中式烹调师操作技能鉴定国家题库 ,应以国家职业标准为依据来确定各等级操作技能的范围和水平 ,制定全国统一的考核内容结构 ,设计相应的测量模块、考核项目和考评标准。题库的开发对规范中式烹调师职业技能鉴定行为 ,统一全国鉴定水平 ,进一步落实中式烹调师国家职业标准 ,确保职业资格证书内在质量 。
While we develop the state storage center of technical ability appraisal test questions for the technicians of Chinese style cooking, the scopes and levels of the cooking techniques for the cooks of all grades should be based on the state professional standards. The construction of the test contents, the design of corresponding measurement patterns, the test items and the checking and appraising standards should be worked out and unified all over the country. The development of the state storage center of test questions is of very great importance to the standardization of the vocational and technical ability appraisal for the technicians of Chinese style cooking, to the unification of the level of appraisal, to the further implementation of the state professional standards for the technicians of Chinese style cooking and to the guarantee of the inner quality of the professional qualification certificates.
