花色苷结构与稳定性的关系及其应用研究 被引量:33

摘要 探讨了花色苷的结构与稳定性的内在关系 ,并综述了国内外对花色苷结构稳定性应用的研究成果 .目前可使常见的稳定性较差的天然花色苷得到实际应用的较好的方法是分子间辅色作用和化学改性 ;生物工程技术使本身结构稳定的一些花色苷大量生产成为可能 ;通过更深入的研究 ,合成安全的花色苷等同物色素也是解决目前食用红色素应用问题的有效方法 . Anthocyanin is a species of edible natural red pigments with good safety and enormous resources.This paper discusses the internal relationship between the structure and stability of anthocyanins, and furthermore reviews its applied research achievements.At present,the preferable methods that can make the ordinary anthocyanins with bad stability to have practical applications are co-pigmentation and chemical modification.It is possible that some anthocyanins with very stable structures can be enormously yielded through biotechnology.By the more in-depth studies, synthesizing of safe equivalents of natural anthocyanins is also a good path that can resolve problems of the application of edible red colorants to food industry.
