摘要
对大豆饼粕采用中性蛋白酶与酸性蛋白酶双酶联合水解处理 ,探索出最适工艺条件为先加 A.S1 3 98中性蛋白酶 ,温度 40℃ ,p H8.0 ,固液比 1∶ 9,酶用量 7.0 % ,水解时间6h;后加酸性蛋白酶 :温度 45℃ ,p H 3 .0 ,酶用量 5.0 % ,水解时间 8h。双酶联合水解后大豆蛋白水解率可达 44.2 0 %
The soya-bean is hydralized with two kinds of microbilogical enzyme,the optimum technical conditions are: reaction temperature of neutral protease A.S1398 is 40℃,pH is 8.0,solid-liquid ratio is 1∶9,amount of enzyme 7.0%,reaction period 6h, the optimum reaction temperature of acidic protease is 45℃,pH 3.0, amount of enzyme 5%, reaction period 8h.The degree of hydrolysis is up to 44.28%.
