摘要
介绍了一种比较简单可行的蛋白质水解度的测定方法 ,该方法基于国外通用的 p H STAT法 ,不需要特别的仪器 ,化学试剂耗量少 ,测定结果可靠 。
A simple and workable method , which was based on pHSTAT method, for determining the degree of hydrolysis of protein , was introduced in the present paper. This method can be used in lab and food industry with good results and little reagents consumptions.
