摘要
研究常见金属离子对女贞果红色素稳定性的影响。用分光光度法测定了一些常见金属离子对色素溶液吸光度的影响。钠、钙离子对女贞果红色素有增色 ,护色作用 ;锌、镁、锰离子对色素无明显影响 ;铜、铅离子对呈色无影响 ,但可加速色素的降解 ;铝、铁、锡离子可使色素溶液变色。建议在开发利用该色素时 ,尽量避免与铝、铁、锡。
To study the effects of metal ion on stability of natural red pigment extracted from the fruits of glossy privet, the influence of metal ion on the pigment was mensurated by spectrophotometer. The metal ions Na +, Ca 2+ have the function of color increasing and color preservation; the metal ion Zn 2+ , Mg 2+ , Mn 2+ have no obvious effect on the color; the metal ion Cu 2+ , Pb 2+ have no obvious effect on the color, but they can increase destruction of pigment. Al 3+ , Fe 3+ and Sn 2+ make the color change. When developing and using this pigment it should not touch appliance made by Al 3+ ,Fe 3+ , Sn 2+ ,Cu 2+ or Pb 2+ .
