摘要
对香蕉瓜的营养成分及其色素的提取和稳定性进行了系统研究 ,结果表明 ,此瓜含有丰富的胡萝卜素、糖、蛋白质和氨基酸等 ,尤其是皮中胡萝卜素含量特别高 .瓜皮中还含有丰富的黄色素 ,该色素对酸、碱、热、食品基质、金属离子等稳定性良好 。
In this paper, nutritious constituent and stability of yellow pigment of banana melon were studied. The result of experiments indicated that there are plenty of carratene, sugar, protein and amino acid, especially higher content of carratene in cortex. There are also plenty of yellow pigment which is stable to acid, base, high temperature and metal irons but unstable to sun shine.
