摘要
选用壳聚糖作保鲜剂,配成浓度为0.5%、1.0%、1.5%、2.0%的溶液分别对黄瓜进行30秒和60秒涂膜处理,室温下袋装贮藏,研究壳聚糖涂膜黄瓜保鲜效果。结果表明:1.0%的壳聚糖涂膜黄瓜60秒保鲜效果较好,室温下贮藏可延长黄瓜的货架期。
In this study, chitosan was chosen as the preservative to coat the cucumbers for thirty and sixty seconds with the concentration of0.5%、1.0%、1.5%、2.0%. The coated cucumbers were packed in plastic bags and stored at room temperature to study the preservation effect. The results showed that the preservation effect for cucumber coated with 1 % chitosan for 60 seconds was better than that of others. The shelf-life of cucumber could be prolonged at room temperature.
