短双歧杆菌的分离驯化及在双歧酸奶中的应用

从健康婴儿粪便中分离出两株厌氧无芽孢杆菌,经鉴定为短双歧杆茵。经驯化,此菌由厌氧生长,被驯化为在牛乳中生长良好,并使牛乳在10小时内迅速凝固的菌种。它与酸奶常规菌种混合发酵后,可制得凝固良好、风味适宜、双歧杆菌达标的保健双歧酸奶。

Two anoxic non-spore bacillus strains isolated from baby feces were identified as B. breve. Through training for a time, it to be grown by anaerobic condition, change into grow good in milk, and make the milk concretion in 10 hours. After fermenting milk with the mixture of B. breve , L. bulgaricus and Str. Thermophilus , the yoghourt solidified well, the taste is proper, number of B. breve get standard.
