The characteristics of inluinase and sequence analysis of inluinase gene are reported in this paper. The inulinase from the yeast strain YI09 is an exoinulinase. The optimal pH and temperature are pH4.5 and 55℃, respectively. An exoinulinase gene from the yeast strain YI09 is amplified by PCR and sequenced. The result shows that the exoinulinase gene is 1?665?bp in length without any intron and contains 4 potential N glycosylation sites.
