发酵香肠菌种筛选标准探讨 被引量:59

摘要 发酵香肠是一类具有地理标志特性的发酵食品,对发酵菌种的筛选没有统一的标准。但分离筛选的微生物必须是安全无毒的,并有利于提高产品的感官品质(色、香、味、形及结构等)。本文就发酵肉制品菌种筛选标准进行了探讨。
