皮边角废料提取胶原蛋白的功能特性

Functional properties of collagen and its polypepetides extracted from hide offal

采用单一酶和复合酶从皮边角废料中提取得到不同分子量分布范围的胶原蛋白及多肽样品 ,对这些样品的功能特性进行了测定。结果表明 :不同分子量分布的胶原蛋白和胶原多肽表现出不同的溶解性、吸水性、润湿性、吸油性、凝胶性、乳化性。

Single and complex enzymes were used to extract collagen and its polypeptides with different ranges of molecular weights from hide offal. The functional properties of the extracted collagen products were determined. It is found that collagen and its polypeptides with different molecular weights differ in their dissolubility in water, water absorption, wetlability,oil adsorption, gel forming, emulsification, foam forming and foam keeping.
