With orthogonality designing the experiment,optimizing method finding the parameters,the fermenting technology of fructose 1,6-disphosphate (FDP) with useless beer yeast was studied.The results indicate that:(1) The mian factor influencing enzymes life is pH;(2)The optimal technology of FDP is sucrose 6%,phosphate 4%,pH6 5,30℃ and 6h.
