摘要 本文叙述了新鲜蛇肉的冷冻干燥实验研究。用电阻测定法测取了新鲜蛇肉的共熔点;在小型冻干机上,用板层导热法研究了新鲜蛇肉的冻干特性,获得了其冷冻干燥曲线,并分析了新鲜蛇肉的冻干过程;对新鲜蛇肉和冻干后的蛇肉的营养成份进行了分析和比较,证实了用冷冻干燥的方法干燥新鲜蛇肉能保持其原来的色、香、味和营养成份。 The present paper reports all experimental study of freeze-drying of fresh snake meat.The eutectic point of fresh snake meat is obtained with the method of measuring electric-resistivity.The characteristic of freeze-drying of fresh snake meat is made in a small equipment of freeze-drying.The curves for freeze-drying of fresh snake meat is analysed.The nutritious compositions of fresh snake meat and freeze-dried snake meat are analysed.The nutrtious compositions of fresh snake meat are compared with the nutrious compositions of freeze-dried snake meat.It is proved that the colour,fragrance,flavour and nutritious compositions of fresh snake meat are not changed after it is freege-dried.
