摘要
经测定 ,苦杏仁中含有 17种氨基酸 ,总量为 2 6 .72 5 % ,比对照巴旦杏仁高 3.194 %。其中含 8种人体必需氨基酸 7.92 2 % ;2种儿童必需氨基酸 3.32 0 % ;甜味氨基酸 6 .0 93%及鲜味氨基酸 9.2 5 9%。其含量均比巴旦杏仁略高。结果表明 ,苦杏仁是一种富含氨基酸 。
The results of the determination on amino acids in bitter almond are as follows: The content of 17 kinds of amino acids was 26.725%, and was higher 3.193% than almond. One of 8 kinds essential amino acids was 7.922%, one of 2 kinds of children′s essential amino acids 6.093%,one of sweet amino acids and fresh amino acids was 6.093% and 9.259% respectively. These are all higher than almond. The results showed that bitter almond is a natural health resource which is rich in amino acids and helpful to the balance of amino acids in human body .
