摘要 淀粉是一种可再生的天然高分子材料,在食品、工农业领域得到广泛应用。本文对淀粉回生的主要影响因素、回生过程中的结构与性能的变化、回生的机理进行了总结。 Starch is a renewable natural polymer materials and widely used in the food ,industrial and agricultural fields .In this paper ,the effect of main factors on the starch retrogradation ,the chan-ges of the structures and properties ,the mechanisms of retrogradation are summarized .
