摘要
花生饼粕是花生榨油后的副产物,一般作为饲料的原料。采用酶解法从花生饼粕粉中提取花生活性肽,并考察了活性肽的还原能力,对·OH,·O2-,DPPH·以及H2O2的清除能力。试验结果表明花生活性肽具良好的还原能力,且对这几种自由基均具有不同程度的清除能力。随着花生活性肽质量浓度的增大,其还原能力和对这几种自由基清除能力都增强。当肽质量浓度为6.0 mg/mL时,对·OH,·O2-,DPPH·以及H2O2的清除能力分别为100%,59.5%,92.2%,97.2%。
Peanut meal powder is the residue after oil pressed from peanut, which has wide source and low price, is generally used as source of animal feed. Bioactive peptide was extracted from peanut meal powder by enzymatic hydrolysis, the reducing ability and scavenging ability on ·OH, ·O2^-, DPPH. and H2O2 were specially noted and compared. The results showed that peanut peptides had certain reducing ability and different scavenging effects on different flee radicals. The reducing ability and free radical-scavenging ability were in creased with the increase of peanut peptides concentrations. When the concentration of the peptides was 6.0 mg/mL, the scavenging rate were 100%, 59.5%, 92.2%, 97.2%, respectively.
