摘要
针对高校食品专业人才的培养目标和食品化学的课程特点,结合笔者的教学实践及体会,从优化教学内容、革新教学方法和手段、重视实践教学和改革考核方式等方面对食品化学课程教学进行改革与探索。实践表明,这不仅提高了课堂教学效果,也培养了学生的科学研究与创新能力。
Aimed at the talent training goal of food specialty and the characteristics of the food chemistry curriculum at colleges,the teaching reform of food chemistry has been studied based on the author's teaching practice and experience,including optimizing the content of course,reforming teaching methods, attaching great importance to the practice teaching and reforming the way of examination. The results show that this reform not only improves the effect of classroom teaching,and cultivates the students' ability in scientific research and innovation.
