我国纯粮固态发酵型白酒加贴碳标签的基础研究

摘要 通过对我国四川、山东、河南和江苏省的8家大型白酒企业中228位员工进行调研,认为我国纯粮固态发酵型白酒生产的大型企业目前除了能源消耗偏大外,在管理者、企业规模、技术能力、环境管理和政府扶持方面都已初具加贴碳标签的基础条件。提出进一步普及我国众多中小型纯粮固态发酵型白酒企业管理者的环保认知,从大型企业着手,通过政府扶持,推动各类型白酒企业利用技术创新进一步提高能源效率,并应充分结合相关的环境管理措施,共同成为推动我国纯粮固态发酵型白酒产品加贴碳标签的重要举措。 Through the survey on 228 employees in 8 large-size distilleries in Sichu an, Shandong, He'nan and Jiangsu, it was believed that large-size distilleries, except the excessive energy consumption, almost met the conditions required for carbon labeling in the aspects including manager level, enterprise scale, technical strength, environmental management, and government support. For most small-size and medium-size distilleries producing Baijiu(liquor) by solid fermentation of pure grains, their cognition of environmental protection should be further popularized.Carbon labeling should start from large-size distilleries. Government support coupled with technical innovation with full consideration of related environmental management measures were the important approaches to advance the development of carbon labeling of Baijiu(liquor) products by solid fermentation of pure grains in China.
