摘要 气调贮藏作为一种有效的水果采后保鲜技术得到广泛的研究,商业化应用成效显著。本文对近年来水果气调贮藏的适宜参数、气调贮藏对水果采后品质、生理及腐败微生物的影响及简易气调贮藏的发展现状和气调贮藏前水果预处理方法的研究进展进行了综述,并指出气调贮藏保鲜技术的发展方向和需要深入研究与探讨的问题。 Controlled or modified atmosphere preservation technology as a kind of effective fruits fresh-keeping technology has been extensively studied and its commercial application was very successful. In this paper, the suitable parameters for fruit preservation under controlled or modified atmosphere, the effects of controlled or modified atmosphere preservation on fruit postharvest quality, physiology and microorganisms, the development status of modified atmosphere preservation and the research progress of pre-treatment combined with controlled or modified atmosphere preservation were reviewed. The development direction of controlled atmosphere preservation technology and the questions which needed further research and discussion were put forward.
