摘要 以硫酸亚铁为催化剂,琼脂与双氧水反应制备了氧化琼脂,并对其性能进行了表征。性能测试结果显示,氧化后琼脂的凝胶温度、凝胶再溶温度、凝胶强度、溶胶旋光度、溶胶表观粘度均降低,而保水性增强;氧化琼脂与原料琼脂的凝胶骨架结构均为多孔性网状结构;质构特性参数中硬度、脆性、弹性、咀嚼性随琼脂氧化程度的增加逐渐降低,而内聚性却逐渐增加。 The Oxidized Agar was prepared by ferrous sulfate as catalyst and reaction of agar with hy drogen peroxide and the properties of Oxidized Agar were tested. The results showed that the gelling tem perature, the gel melting temperature, the gel strength, optical rotation, apparent viscosity of Oxidized Agar decreased while the water holding capacity increased. The gel skeleton microstructures of Oxidized Agar and Raw Agar tended to be a porous network structure. The hardness, the fracturability, the spring iness, the chewiness of Oxidized Agar gels decreased except that the cohesiveness increased with the in crease of the oxidized degree.
