摘要
目的全面了解渝中区食品卫生状况,确定食源性致病菌在不同类食物中的分布情况,为食品安全风险评估提供科学依据。方法按国标GB4789和食源性致病菌监测手册的方法,对16类食品中的沙门氏菌、志贺氏菌、金黄色葡萄球菌、阪崎肠杆菌、蜡样芽胞杆菌、单核细胞增生李斯特氏菌、致泻大肠埃希氏菌、副溶血性弧菌和布鲁氏菌进行分离与鉴定。结果 2011-2013年共检测食品样品630份,检出食源性致病菌31株,总检出率为4.92%,其中检出金黄色葡萄球菌15株,检出率为2.46%(15/610);单核细胞增生李斯特菌7株,检出率为2.15%(7/325);蜡样芽胞杆菌2株,检出率为1.43%(2/140);阪崎肠杆菌7株,检出率为10%(7/70);而沙门氏菌、志贺氏菌、致泻大肠埃希氏菌、副溶血性弧菌、布鲁氏菌均未检出。结论本区所售食品存在一定的安全隐患,应加大监管力度,避免食品安全事件的发生。
Objective To understand the hygiene condition and FoodBorne Pathogens contamination in food in Yuzhong district, Chognqing. Methods Salmonella, Shigella, Staphylococcus aureus, Enterobacter Sakazakii, Bacillus cereus, Listeria monocytogenes, diarrhea causative Escherichia coil, Vibrio parahaemolyticus and Brucella were tested according to "Microbiological examination of food hygiene" and "the manual of surveillance on FoodBorne Pathogens". Results Totally 630 various food samples were detected and 31 bacteria strains were isolated, the overall Detection rate was 2.46 %. The Detection rate of Staphylococcus aureus, Listeria monocytogenes, Bacillus cereus and Enterobacter Sakazakii was 2.46% (15/610), 2.15% (7/325), 1.43% (2/140) and 10% (7/70) separately, and Salmonella, Shigella, diarrhea causative Escherichia coli, Vibrio parahaemolyticus and Brucella were not detected. Conclusions Foods were contaminated by foodborne pathogens in Yuzhong district, Chongqing. the govemment should stress the supervision of food safety to avoid food safety incidents.
