河南省散装糕点微生物污染状况调查及分析 被引量:7

Investigation and analysis of microbial contamination of pastries in bulk in Henan province

摘要 目的了解河南省散装糕点的卫生状况,为卫生监督管理提供依据。方法选择河南省5个省辖市的蛋糕店、超市、集贸市场共采集样品90份。根据GB/T 4789.24-2003《食品卫生微生物学检验糖果、糕点、蜜饯检验》方法对样品进行菌落总数、大肠菌群、沙门菌、志贺菌、金黄色葡萄球菌、霉菌等6个项目检测。根据GB 4789.10-2010对样品进行金黄色葡萄球菌肠毒素检测。结果此次采集的散装蛋糕及面包各项微生物指标均合格的合格率为64.44%。菌落总数的总合格率为72.22%,大肠菌群的总合格率为83.33%,霉菌的总合格率为83.33%,金黄色葡萄球菌的总合格率为86.67%。沙门菌和志贺菌在所有样品中均未检出。在一份样品中直接检出了金黄色葡萄球菌肠毒素。结论河南省散装糕点的卫生质量存在一定问题,相关部门应加强监督管理力度。 Objective To understand the hygienic status of pastries in bulk in Henan province,and provide basis for hygienic supervision and administration. Methods Ninety samples were collected from pastry stores,supermarkets and pedlars' markets in 5 cities of Henan province. Then total bacteria,coliforms,Salmonellae,Shigellae,S. aureus and moulds were detected in these samples according to GB /T 4789. 24- 2003 Microbiological examination of food hygiene: examination of candy,cake and preserved fruits. While enterotoxins from S. aureus were detected according to GB 4789. 10- 2010. Results The pass rate of all microbial indexes was 64. 44% in these samples of cake and bread in bulk,and that was 72. 22% for total bacteria,83. 33% for coliforms and molds,86. 67% for S. aureus. While Salmonellae and Shigellae were not found. S. aureus enterotoxins were only found in one sample. Conclusion The hygienic status of pastries in bulk in Henan province is not good. It is imperative that the relevant authorities should strengthen supervision and administration over this issue.
