河南省2012年-2013年3种节日食品抽检结果分析 被引量:1

Analysis of the test results of three festival food in Henan province from 2012 to 2013

摘要 目的了解河南省3种节日食品:月饼、粽子、元宵的卫生状况。方法采用国标所规定的方法分别对总砷、铅、酸价、过氧化值、黄曲霉毒素B1、沙门菌、金黄色葡萄球菌、志贺菌等项目进行测定。结果月饼、粽子、元宵综合合格率分别为92.1%、95.9%、100%;市区和县区3种节日食品合格率比较:其中市区月饼合格率高于县区,差异有统计学意义(χ2月饼=0.97,0.01<P<0.05),超市、宾馆酒店、个体作坊食品的合格率对比,宾馆酒店中月饼合格率高于超市和个体作坊,差异有统计学意义(χ2月饼=8.35,0.01<P<0.05),总砷含量依次为:粽子>元宵>月饼,铅含量依次为元宵>粽子>月饼,酸价含量依次为月饼>粽子>元宵,过氧化值含量依次为粽子>元宵>月饼,差异均有统计学意义。结论月饼、粽子、元宵三种节日食品综合合格率均较高,县区及个体作坊中月饼合格率相对较低,需加大监督管理力度。 Objective To learn the hygienic situation of mooncake,Zongzi,Yuanxiao in festival in Henan province. Methods In accordance with GB method,the total arsenic,lead,acid value,peroxide value,aflatoxin B1,Salmonella,staphylococcus aureus,shigella and other items were determined in festival food samples. Results The comprehensive qualified rates of mooncake,Zongzi and Yuanxiao were 92. 1%,95. 9%,100% respectively. The qualified rate of moon cakes in the urban area was higher than county,and the difference had statistical significance( χ2mooncake= 0. 97,0. 01〈 P 0. 05). Comparing the qualified rates of the three foods in the supermarkets,restaurants and individual workshops,the restaurants showed higher qualified rate than the other two,with significant statistical difference( χ2mooncake= 8. 35,0. 01 〈P 0. 05). The pass rate of total arsenic from high to low was Zongzi 〉Yuanxiao 〉mooncake,while that of lead was Yuanxiao 〉Zongzi 〉mooncake,that of the acid value was mooncake〉 Zongzi 〉Yuanxiao,that of the peroxide value was Zongzi 〉Yuanxiao〉 mooncake,the difference of all the items had statistical significance. Conclusion The comprehensive qualified rates of mooncake,Zongzi and Yuanxiao are higher in Henan province,but the qualified rate of mooncake in the county and the individual workshop is relatively low,need to strengthen supervision and management.
