摘要
对中国三大风味消费区域中代表性消费城市的消费者进行风味液态乳关键感官属性测试,分析影响液态乳市场接受性的关键感官属性,并采用Penalty分析对消费者感官评价结果进行分析,为样品感官品质改进方向提供指导。结果表明,北京地区和成都地区消费者口味喜好比较相近,不喜欢偏酸的乳制品,而3个城市消费者均认为乳香味和稠厚感对样品整体口感影响较大。
Select three typical cities within three different areas in China for flavoured liquid milk consumption, to launch market investiga tion for consumer perception and preference. Penalty analysis was utilized to analyse the results of consumer preference evaluation for key sensory attributes of flavoured liquid milk, which could provide direct guidance for improvement of sensory quality. It shows that consumer preference of Beijing and Chengdu are similar, and samples whose acid are slightly too much are not been liked. Consumers of these three cities agree that frankincense and thick are greater influ ence on the overall taste of the flavoured liquid milk.
