摘要
为研究复合寡糖微量元素络合物对育肥猪肉质、血清和组织微量元素含量及抗氧化功能的影响,选取体重约98 kg的"杜×长×大"三元杂交猪90头,随机分为3组,每组3个重复,每重复10头(公母各半)。对照组饲喂常规高铜日粮,有机试验组饲喂添加了复合寡糖微量元素络合物的日粮,无机试验组饲喂等量于有机试验组的无机微量元素日粮。预试期7 d,正试期28 d。结果表明:①同比高铜对照组,有机试验组提高了背最长肌红色色度a*值73.75%(P<0.05),24 h和48 h的滴水损失率降低了1.40个百分点(P<0.05)和1.12个百分点(P>0.05);与无机试验组相比,有机试验组有改善背最长肌肉色和降低滴水损失的趋势(P>0.05)。②血清、肌肉中铜、锌以及肝脏和肾脏中铜、锌和锰含量以对照组最高,有机试验组多数高于无机试验组,但后两者间均无显著差异(P>0.05)。除了肾脏外,血清、肌肉和肝脏中铁的含量以有机试验组最高,而无机试验组和对照组间均无显著差异(P>0.05)。③有机试验组显著提高了血清总抗氧化能力和肝脏、肌肉中谷胱甘肽过氧化物酶活力(P<0.05)。上述表明,育肥猪阶段使用复合寡糖微量元素络合物替代高铜日粮具有改善肉质和增强机体抗氧化的功效。
A study was conducted to determine the effects of oligosaccharide trace mineral complex on fresh meat color and drip loss, serum and tissue mineral concentration and anti-oxidation in finishing pig. A total of 90 health pigs (Duroc×Landrace×Yorkshire) with an average initial body weight of 98 kg were randomly allocated to 3 groups by weight and sex. Each group included 3 pens (replicates) of 10 pigs. The control diet was the common high level of copper diet. The organic treatment diet contained oligosaccharide trace mineral complex, and the inorganic treatment diet contained the same level of trace mineral as diet of organic treatment but replacing the sources by inorganic ones. The feeding test lasted for 28 d days after 7 days of adaptation period. The results showed that:①Compared with the control treatment, the organic treatment increased the a* value by 73.75%(P〈0.05), and decreased the drip loss of the L. dorsi muscle tested after 24 h and 48 h by 1.40 percentage point(P〈0.05) and 1.12 percentage point(P〉0.05), respectively. Compared with the inorganic treatment, meat color and drip loss of organic treatment were also ameliorated(P〉0.05). ②Pigs in the control treatment had the hizhest Cu.Zn and Mn concentration of serum and tissue. And most of them were higher in the organic treatment than that in the inorganic treatment, but there were no significant differences between the latter two treatments(P〉0.05). ③ The T-AOC in serum and the GSH-Px in liver and muscle were significantly increased in the organic treatment(P〈0.05). In summary, supplementing with oligosaceharide trace mineral complex in finishing pigs' diet instead of using high-level-of-copper-diet can amelinrate pork quality anti enhance the anti-oxidation without infecting the growth performance.
