摘要
[目的]利用指纹图谱技术快速检测掺伪大豆油的花生油。[方法]利用气相色谱质谱联用技术(GC-MS)建立大豆油、花生油、掺有大豆油的花生油GC-MS指纹图谱,并分别匹配特征峰,通过特征峰比对,快速辨识花生油与掺伪大豆油的花生油。[结果]花生油指纹图谱匹配了9个共有峰,掺伪花生油指纹图谱共匹配了10个共有峰,利用共有峰差异可快速筛选掺伪花生油。经过质谱数据库分析,掺伪花生油中增加的色谱峰为C18∶3不饱和脂肪酸,大豆油掺伪量最低检出限为5.5%(V/V)。[结论]利用指纹图谱技术可快速、准确地鉴别掺伪大豆油的花生油,也为其他油脂掺伪快速检测提供参考。
[Objective] To establish rapid detection method of peanut oil adulterated soybean oil by fingerprint technique.[Method] Establish soybean oil,peanut oil and peanut oil adulterated soybean oil fingerprint chromatography by GC-MS.Mark the characteristic peaks in the fingerprints.Rapidly screen peanut oil and peanut oil adulterated soybean oil by comparing the difference of the characteristic peaks.[Result]Nine characteristic peaks were marked in the fingerprint of peanut oil and ten were marked in the adulteration peanut oil.The significant difference between their fingerprints can be used to screen the adulteration peanut oil rapidly.The additional characteristic peak in the adulteration peanut oil was C18∶3 unsaturated fatty acid.The LOD was 5.5% (V/V).[Conclusion] The method was rapid and accurate in the detection of the adulteration peanut oil by fingerprint.
