中国白酒“精、气、神”——白酒鉴评中的“五官九觉” 被引量:4

摘要 幽雅的香气成分、舒适的风味成分、有益健康的活性成分是酒中精华,是白酒的物质基础,构成白酒之"精";千百年来,白酒所承载的优秀历史、文化,让其始终存在于历史长河中,生生不息,它形成白酒之"气";白酒优美的酒体(精)与它象征的优秀历史、文化(气)联姻,化为了白酒之"神"。白酒的"五官九觉"鉴评就是通过白酒对五官的刺激,唤起视觉、听觉、嗅觉、味觉、触觉及超感官的知觉——心觉(第六感)、时觉(第七感或时间感)、空觉(第八感或神觉)和意觉(综合感觉)等,品味白酒的"精、气、神",感受白酒带来的物质与精神双重愉悦,最终实现对白酒最大限度的享受。 Elegant aroma components, comfortable flavor ingredients, healthy active ingredients compromise the material basis of Chinese liquor, namely the essence of liquor. For thousands of years, liquor represents the excellent culture, being perpetual in history, which forms the breath of liquor. The beautiful liquor body (the essence) combines with the excellent history and culture (the breath), turning to the spirit of liquor. The five senses and nine feelings evaluation refers the stimulation of five sense organs evokes sense of vision, hearing, smell, taste, touch and extrasensory perception - heart feeling (the sixth sense), time feeling (the seventh sense or time sense), empty feeling (the eighth sense or God consciousness) and idea feeling (integrated feeling), etc. The essence, breath and spirit bring material and spiritual pleasure and ultimately realize the enjoyment of liquor drinking.
