摘要
采用气调治理酱香型大曲曲虫,效果极为明显,结果表明:通气处理4h后,搬至干曲仓贮存6个月后,大曲的损失率最高为1.8%,而未处理组大曲的损失率平均可达16.12%。除此之外,处理组和未处理组微生物数量虽无明显变化,但是被曲虫危害过的大曲,其正常的曲香味被掩盖,且有严重的异杂味或虫屎臭,这对酱香型白酒的卫生生产无疑是有害的,而通过治理的大曲却能保持正常、良好的曲香味,且其皮张、断面、色泽及外观均较好,符合优级酱香型大曲的验收标准。
Using the method of modified atmosphere to control pests in Moutai flavor Daqu, the effect was very obvious.The results showed that after the aeration treatment for 4h and moved to dry storage warehouse keep for 6 months, the highest rate of Daqu loss was 1.8% ,while the untreated group of daqu average loss rate can reach 16.12%. In addition, the treated and untreated groups were not significantly diffirent in the number of microbes, but the Daqu was harmed by pests that its normal flavor was covered, and there was a serious pests feces exclusive savor or odor, which was undoubtedly harmful to flavor liquor production. But through the governance, Daqu could maintain normal, good smell, and it hides, cross section, good color and appearance were conformed to the optimal level of Maotai flavor daqu acceptance criteria.
