生物微量矿物元素的制作及其对肉鸡肌肉营养成分的影响 被引量:2

摘要 将一种由食用菌发酵生成的生物微量矿物元素按0.35%添加到42~63日龄的黄羽肉鸡日粮中,考察生物微量矿物元素对肉鸡肌肉营养成分的影响。结果表明:与对照组相比,在日粮中添加0.35%的生物微量矿物元素,肉鸡胸肌和腿肌中蛋白质、氨基酸的含量分别提高了7.05%和8.86%、15.19%和6.63%;胸肌和腿肌中粗脂肪的含量分别降低了13.25%和17.68%,肉质中水分、灰分以及微量无机元素铁、铜、锰、锌的含量没有明显变化,但显著提高了硒在胸肌和腿肌中的沉积。综上所述,生物微量矿物元素对肉鸡肌肉营养成分有一定程度的改善作用。 A In this ctudy, biological trace mineral elements (BTME) generated by the edible fungus fermentation were added by 0.35% to the diet, used for 42-63-d-old broilers .Six broilers per group were slaughtered at 63d, the same part of the chest and leg muscle was sampled to determine the main nutritional components and study the effects of the BTME on the nutritive composition in broilers' muscle. The results show that compared with the control group, the BTME could significantly improve the contents of protein and total amino acid (P〈0.05) , essential amino acids and flavor amino acid (P〈0.01) in the broilers' breast muscle and leg muscle; the BTME could also significantly reduce the content of crude fat in chest and leg muscle (P〈0.05) .There was no significant effect on the contents of moisture, ash and trace inorganic elements such as iron, copper, manganese and zinc (P〉0.05) , but the deposition of selenium significantly increased in broilers' muscle (P〈0.05) . And the BTME had to certain extent improvement in the nutritive composition in broilers' muscle.
