粮食及其制品真菌毒素监测与处理技术发展现状与趋势 被引量:5

摘要 监测粮食真菌毒素污染状况,预警污染水平,及时掌握污染动态和科学处理污染粮食是当前实施预防为主、防治结合策略,转变以往"被动防御"为"主动保障"食品安全战略转移的重要内容。当前,世界各国都十分重视粮食真菌毒素监测、预警和处理技术的研究工作,相继取得了一定的进展。通过对当前粮食真菌毒素监测和处理技术现状的介绍和分析,提出了相关技术今后发展的趋势,并对目前存在的问题和需求给出应对措施和建议。 Mycotoxins are toxic natural secondary metabolites produced by several species of fungi, widely contaminated grain and its products. It is of great importance to monitor myeotoxin contamination condition, give early warning of pollution levels, keep abreast of pollution trends and treat contaminated food scientifically, which is the key content of implementing the strategies of prevention first, combining prevention with control, shifting fi'om the strategy of "passive defense" in the past to the present strategy of " active protection". Nowadays, countries all over the world have attached great importance to the research on food myeotoxin monitoring, early warning and treatment technologies of myeotoxins in grain and some progress has been achieved in this area. The paper proposes the development trends of related technology after introducing and analyzing the status of monitoring myeotoxins in grain and treatment technology and then puts forward some eorl"esponding measures and suggestions in the light of the existing problems.
