摘要 辣鲜露调味料是一种新型的辣鲜复合调味料,通过萃取干辣椒和天然香辛料中的辣味成分和辛辣物质,能有效提高各式菜肴的复合口感和鲜辣风味。辣与鲜的口感调和均匀,高度浓缩,无论是对菜肴前期腌制或是后期烹炒,都能起到鲜香并重、提升整体风味的效果。研究以水为溶剂,通过萃取干辣椒和天然香辛料中辛辣风味成分制备成辛辣汁,再添加辣椒油树脂、酵母抽提物、谷氨酸钠、黄原胶、食用盐、I+G、白砂糖等辅料,通过单因素实验和正交实验对辣鲜露调味料的配方工艺进行优化,研制出辣鲜风味独特、香气馥郁诱人、质量稳定的调味产品。 Spicy fresh dew seasoning is a new spicy and fresh complex seasoning,the complex taste and spicy flavor of various dishes can be improved efficiently through extracting spicy ingredients and spicy substances from dried chili and natural spices.Spicy and fresh taste is reconciled uniformly,highly concentrated;either for pre-marinated or post-frying,it can enhance the overall flavor.In this study, using water as solvent to prepare spicy sauce by extracting the spicy ingredients from dried chili and natural spices,then add capsicum oleoresin,yeast extract,sodium glutamate,xanthan gum,salt, I+G,white sugar and other accessories,optimize the formula process of spicy fresh dew seasoning through single factor and orthogonal experiments,develop the seasoning product with unique spicy and fresh flavor,enticing aroma fragrance and stable quality.
