摘要
多不饱和脂肪酸(PUFAs)具有重要的生物学功能,其中ω-3系列不仅是人体的必须营养素,随着纯ω-3PUFAs需求量的扩大,研究已发现其更多新来源以及分离纯化的新方法和条件,其中微生物来源和酶法富集是目前的研究热点。同时,大量研究对其在疾病调节方面的作用机理已有突破,例如体重控制,心血管疾病预防,抗炎作用以及精神疾病治疗等。本文主要介绍ω-3多不饱和脂肪酸来源,分离纯化以及生理功能方面的研究进展。
Polyunsaturated fatty acids (PUFAs) has important biological function to human body, especiallyω-3 is one of the body's essential nutrients.As ω-3 pufas demand expansion, there are more new sources and purification methods ,especially the microbial source and enzymatic method are current hotspots.And there are many studies have shown it mechanism breakthrough of the disease, such as weight control, cardiovascular disease prevention, anti-inflammatory and mental disease treatment, etc. The research progress of the ω-3 pufas, source, separation and purification, and physiological functions were introduced.
